Our Story
At Hanoi Old Quarter, every dish tells a story, of tradition, family, and flavour.
Founded by Head Chef Hong Duong and Owner Rose Nguyen, our menu is inspired by the comforting meals of their childhood and the bustling street food of Hanoi. Rose’s grandmother was a pho vendor in Hanoi, and her legacy lives on in every bowl we serve.
Behind the kitchen doors and at the heart of the restaurant are Head Chef and Founder Hong Duong and Owner Rose Nguyen, who share a lifelong dream:
“We wish to be the bridge connecting Vietnamese cuisine to the world and bringing the world closer to Vietnam.”
Rose grew up in the quiet coastal village of Diêm Điền, in the rice-farming countryside of Thái Bình. Her earliest memories are filled with the scent of ripening rice, the lullabies of her mother, and the warm bustle of family meals. But it was her grandmother’s phở, served from a humble street cart in Hanoi, that truly left its mark.
When her grandmother passed, Rose’s mother took over the cart and continued the tradition with tireless love and strength.
She raised Rose and her two brothers on those bowls of phở, working hard every day to provide a future for her family.
All three children graduated, a testament to their mother’s quiet resilience and unwavering dedication.
“Our grandmother never had a proper restaurant,” Rose shares, “but through this one, I’ve made her dream come true.”
Together, Rose and Chef Hong have built more than a restaurant. They have created a living tribute to the women who came before them and the food that raised them. Hanoi Old Quarter is their way of sharing home with the world, through recipes passed down, flavours that evoke memory, and hospitality that feels like family.
From sizzling chả cá and crispy bánh xèo to the signature short rib phở and cocktails kissed with Vietnamese plum salt,
every dish is prepared with care, tradition, and heart.
Vancouver gave them the space to grow their dream. Hanoi Old Quarter brings it to life.
Welcome to our table. Where tradition is remembered, elevated, and joyfully served.
